Sometimes I think my kitchen is a drive through. This morning son #1 shouted down "Can I have a turkey bacon omelet for breakfast? I'll be down in 5 minutes!"
Fine, then, here's a 5 minute bacon omelet:
1. Drop a teaspoon of olive oil in an 8" non-stick skillet and heat it over medium high heat.
2. Chop 1 slice of bacon and drop it in the skillet. Cooking the bacon is what takes all the time, but it goes fast after this!
3. Get an egg and beat it in a cup (because this early in the morning bowls tend to think they can fly); add pepper (the bacon is salty enough).
4. Stir the bacon occasionally while you pour a glass of juice, rummage for the shredded cheese, and put the eggs and bacon back in the 'fridge.
5. Tear a paper towel in half, one half will be used to drain the bacon and the other to wipe out the skillet.
6. Turn off the heat and dump the bacon onto the paper towel.
7. Wipe out the skillet.
8. Put a dab (maybe 1/2 tsp) of butter in the skillet and spread it around.
9. Pour the egg in the skillet and swirl it around evenly.
10. Put a lid on the skillet. Ok, it wasn't a lid, it was another pan that didn't get dried and put away last night.
11. Take a minute to clean up your work area.
12. Sprinkle the now cooked (thanks to residual heat) omelet with the bacon, some cheese, and roll it out onto a plate.
#1 and I will use these directions to turn out omelets for the family this weekend, as my husband says the boys will never leave home if I don't teach them to cook.
Child #2 will come stumbling out of bed in about 10 minutes, but he's going to want something TOTALLY different...Welcome to Mom's, can I take your order?
