Gas or Groceries?

Groceries and Gas I hear the same thing day after day "The price of gas is eating into my grocery budget!"  It is very hard right now to choose the organic product that is twice the price of the non-organic, or the burgers and hot dogs over the lean chicken and pork.  It doesn't take a lot of effort to keep your meals high quality while still filling your tank, just a little creativity.

Obviously, you're already planning with the sale flyers.  But try to think lower on the food chain.  Get your family to eat at least one bean meal a week. It could be something as simple as Baja Black Beans and Rice.  This is good on its own, and equally as good as a burrito or fajita extender.  Grilling sandwiches is a great way to elevate a cheap meal into something special.  Just let everyone make their own sandwiches, and then grill them open faced.  Add the cold toppings like lettuce and tomato after the sandwiches are grilled.  Grilled pineapple slices or peaches make an excellent dessert.

Thankfully summer is coming so instead of expensive jars of organic pasta sauce you can dress your pasta simply with olive oil, herbs, and lightly steamed vegetables.  Try to get in the habit of drawing off a cup of the pasta water before you drain the pasta.  It's an easy way to stretch your sauce without adding extra oil.  Make a large salad and offer a variety of toppings like hard boiled eggs, cheeses, and olives.  Most leftover salad toppings can be folded into an omelet or chicken/tuna salad the next day.

Think about cutting back on the entree and adding an extra vegetable or fruit.  The more choices there are to put on a plate, the less that the big hunk of meat will be missed.  It's much healthier than adding an extra scoop of rice or slice of bread, too.

To save money, add variety, keep it simple, and keep it fresh.
